L'Office National Interprofessionnel des Céréales (ONIC) est la transformation en 1940 (Loi du 17 novembre 1940) de l'Office du Blé créé en 1936 par le Front populaire. L'ONIC reprend la plupart des attributions de l'ONIB (en particulier l'encadrement de la mise en marché et sa régulation) et voit ses compétences élargies à toutes les céréales, y compris le riz.
Les professionnels intéressés (production, transformation, négoce) sont représentés à son Conseil Central.
Les personnels sont fonctionnaires, selon des dispositions spécifiques.
Le 1er juin 2006, L'ONIC est intégré dans l'Office Interprofessionnel des Grandes Cultures (ONIGC) (Décret n°2006-634 du 31 mai 2006).
